2 tablespoons extra virgin olive oil

1 cup diced carrots

1/2 cup diced celery

2 tablespoons dried minced onion

1 teaspoon fine sea salt

1/2 teaspoon black pepper

1/2 cup chopped fresh basil

2 (15-ounce) cans diced tomatoes 

2 cups bone or vegetable broth

1/2 cup full-fat coconut milk 

  1. Add all of the ingredients to your Vitamix blender and blend on high until smooth and the soup begins to steam, about 8 minutes. Serve warm with salt and pepper to taste.
