Farfalle Broccoli Alfredo  – Instant Loss

I have to limit my dairy intake because of my thyroid disease and my lactose intolerance. Broccoli Alfredo has always been a favorite pasta dish of mine so I reinvented it and made it dairy-free so I could consume it without the stomach pain and bloat!

Farfalle Broccoli Alfredo 

For the Sauce

2 cups water

1 cup raw cashews

2 tablespoons nutritional yeast

2 cloves garlic, peeled

2 teaspoons fine sea salt

1/2 teaspoon ground black pepper 

12 ounces Organic brown rice gluten-free farfalle, cooked according to the package instructions (I like Jovial Brand)

2 pounds steamed broccoli

  1. Add all of the sauce ingredients to your Vitamix blender. Blend on high until the sauce begins to steam and thicken, about 8 minutes. 
  2. In a large bowl toss the farfalle, broccoli, and sauce together. Serve immediately.
